The role of contaminated environmental surfaces in the transmission of different pathogens is supported by the fact that cleaning and disinfection can decrease the incidence of microbial colonisation or spreading of infection. The second part of studies stress the importance of disinfection as very important preventive measure of foodborne diseases, because suitable sanitary environmental conditions in food processing plants could decrease the level of the microbial contamination. The acquired knowledge indicates the need for regular performing of mechanical cleaning and disinfection; using of suitable disinfectants and cleaning agents which should be adapted to the material of surface, presence of organic material, temperature of the environment; presence of animals and to other factors.
