Saverio Manetti (1723-1784), who was one of the founders of the Georgofili Academy, published in 1765 the treatise On the different species of wheat and bread as of bread making (…), divided into ten articles, with the purpose of solving the endemic and tragic shortage of wheat which was followed by terrible famines that systematically decimated the poorest part of the population.
