Microbiological assessment of the environment, utensils, surfaces and hands

This book refers to the graduation course completion work entitled "Microbiological evaluation of the environment, utensils, surfaces and hands of handlers in a pig slaughtering unit in the city of Januaria-MG", authored by Rosilva Pereira dos Santos, under the guidance of Professor Dr. Luiz Carlos Ferreira of the Instituto Federal Norte de Minas Gerais (IFNMG). This work discusses the microbiological assessment of the environment, utensils, surfaces and hands of food handlers in a food unit used for slaughtering pigs, which is related to the health risks for consumers.
