Del tallo maduro (pina) se obtiene el mezcal, bebida de gran aceptacion popular, sobre todo entre los habitantes que no disponen de suficientes ingresos para comprar otras bebidas alcoholicas de mayor precio. En la elaboracion de la bebida, se utilizan tallos jimados (pinas) de agaves silvestres o cultivados, de 8 anos o mas de edad; de las especies de: Agave angustifolia, A. esperrima, A. weberi, A. potatorum y A. salmiana. La cosecha intensiva y la depredacion de los nucleos de plantas naturales existentes, hace imprescindible impulsar la produccion tecnificada del cultivo para satisfacer la demanda de materia prima existente en los mercados de consumo de mezcal.
