Ingredients:
4 Chicken Thighs, Skinless & Boneless Sea Salt & Black Pepper to Taste 1 Teaspoon Cumin ½ Tablespoon Olive Oil 1 Teaspoon Smoked Paprika 1 Teaspoon Coriander 1 Clove Garlic, Minced ½ Yellow Onion, Chopped 1 Carrot, Chopped 14 Ounces Tomatoes, Chopped 4 Medjol Dates, Chopped 4 Tablespoons Chicken Stock ½ Lemon, Cut into Wedges 4 Tablespoon Green Olives, Pitted 2 Tablespoon Pine Nuts Mint, Chopped for Garnish
Directions:
Mix your chicken thighs with your salt, pepper, oil, paprika, coriander and cumin. Press saute on your instant pot, adding in your chicken. Brown for five minutes per side. Add in your onion, carrot, tomatoes, garlic, stock, olives, and dates. Stir well, and cook on high pressure for twenty minutes. Sprinkle with pine nuts and mints before serving.
