This research refers to the use of solid waste generated in the processing of white grapes to obtain wines, by means of an aerobic bioprocess known as solid state fermentation (SSF), which allows obtaining a product (organic fertilizer) very useful for conditioning crop soils, allowing solving contamination problems caused by such waste and obtaining benefits.
