The book is divided into chapters that describe the entire process of assessing the quality of honey through physicochemical analyses such as pH, acidity, soluble solids, refractive index, humidity, electrical conductivity, ash and total dissolved solids, as well as microbiological parameters in order to identify the presence of bacteria of the Staphylococcus genus, enteric bacteria, fungi and total bacteria.
