Citrus is a magnificent crop fruit globally known for its nutritional, industrial and medical properties. Most consumers prefer oranges fruit that are orange or yellow colour. However, the degreening technology using ethylene to improve the colour of orange peel is impracticable to apply because this exists the gases form, so it can be substituted with working use Ethephon. Ethephon is more practical to use because this is a liquid.The objective of this study is to evaluate the effect of ethephon and temperature and the combined effect of the factors on the quality of orange fruits, particularly in terms of weight and colour in the process of their ripening, after different treatments and conservation conditions. To evaluate the effect of ethephon on orange fruits we used a total of 16 oranges. The weight and color of all the oranges were measured respectively using the precision balance and Chromameter every 3 days. Maintaining and improving the quality of oranges involves integrated management throughout the supply chain, from cultivation to distribution, in order to meet consumer expectations and maximize their economic value.
