I enjoy country walking and cooking. So why not combine the two? My wife and I live and walk in the Peak District National Park in the United Kingdom. The fresh country air in the hills builds an appetite. I have put together my homemade recipes that are favourites at the different times of the year, along with the photos of the countryside that inspired them. The book is seasonal, so you would expect Spring, Summer, Autumn, and Winter but at any time of year the grey gloom can descend, so I have added a section for Grey Days.

Spring is in the air when the first shoots of new life show throughout the landscape. Join us for lighter fresher food as the temperatures warm and the daylight lengthens. Some highlights to entice your taste buds.

  • A burger stack without bread which unites gammon with a mango salsa

  • The simplest, but tasty oven omelette

  • One of our favourites, chicken and cashew nuts.

Summer can bring lazy, hazy days with al fresco dining. What better than to sink into a chair in a beautiful garden with a good plate of food.

  • Or a beer glass containing a salmon rice wrap with salad

  • Perhaps an unusual combination of trout, artichokes, and tarragon

  • Maybe seasonal produce which will yield stuffed figs

  • Could gooseberry swordfish tempt you?

As the turn comes to the fiery autumn colours in the landscape our thoughts revise to the food we want after a good walk.

  • Baked Chinese Styles Lamb Wraps form a tasty meal

  • Or for a snack: Florentine Tart, which is full of savoury flavour

  • Perhaps more adventurous with Cod on a Coconut and Courgette risotto

  • An unusual combination: Aubergine Fishcakes

In the depths of winter, when snow is on the ground, we want hearty and tasty food so let's go for international flavours.

  • Bring a Caribbean taste to winter with Prawn Creole

  • Or a dish from Sri Lanka that has become a firm winter favourite - Mulligatawny Soup

  • We borrow from South Africa, for the unusual vegetarian Beetroot Babotie

  • Cullen is a Scottish port famed for a Skink, we have produced a Chinese Skink
